Chicken Tangine with Apricots


Ingredients

  • 1.6 pounds (0.7 kg) of chicken
  • 2 medium sized onions (grated)
  • 2 tablespoons (28 grams) butter
  • A small bouquet of fresh cilantro
  • 500 ml (2 cups ) water
  • 1 teaspoon salt
  • 1/2 tsp pepper
  • 1 tsp ground ginger
  • 1 cinnamon stick
  • A pinch of saffron
  • 300 grams (10.5 oz) of dried apricots
  • 1/4 cup of honey
  • 1/2 teaspoon ground cinnamon
  • Roasted sesame seeds for decoration

Directions

  1.  Step 1: Cooking The Chicken
    1- Place the dried apricot in a bowl, cover with hot water and let it sit there for 1 hour until we use them.
    Peel and grate the onions - we need to make sure that the onions were refrigerated to avoid a crying party! they need to be cold.
    2- Place the grated onions and chicken spices + butter in the cooking pan. Cook for a few minutes on medium heat to get all the spices 'awake'
    3- Place the chicken with the onions and spices. cook on medium heat for around 4 minutes to brown the chicken.
    4- Add the cilantro bouquet to the pot. Add water until the chicken is half-covered.
    5- Cover the pot and cook on medium-high heat until the chicken is done. Around 45 minutes.
    6- once the chicken is done, remove it from the pot and place it in a separate bowl. Cover to keep hot.
  2. Step 2: Cooking The Apricots
    7- Drain the dried apricots from the water. Place the apricots in the pot (where there is still sauce where the chicken cooked), add the honey and ground cinnamon. Cook on medium heat for 10 mn.
    8- Bring back the chicken to the pot, mix gently to cover the chicken with the sweet honey sauce.
    9- Serve immediately. Place the chicken on the plate and top with with the caramelized apricots. Sprinkle the sesame seeds on top of the apricots.

    Serve hot with French or Moroccan bread. Bon Appetit!
