Step 1: Preparing the Ingredients
1- First, cut the vegetables into very small cubes.
2- I am using shrimp in this recipe but you can also use chicken breast (cut into very small pieces). You will have to cook the chicken a little longer in the beginning (compared to the shrimp)
3- The rice has to be cooked in advance before using in this recipe. On the cooked rice, add the crushed garlic, light brown sugar, light soy sauce, and white ground pepper. We reserve the rice for later after we half cook the shrimp and vegetables.
Step 2: Cooking the Shrimp and Vegetables
1- Add vegetable oil to a pan and heat it up on medium heat for a few seconds. Now add the prawns or shrimp,
Notice they are chopped into very small pieces so they cook fast. You can also add other vegetables of your choice or if you like sweet, pineapple! you can also use small pieces of chicken breast if you want, and cook for 1 minute – if you are using chicken, you should cook it for 5 minutes or so.
2- The secret technique is to use the back of your spatula to massage the shrimp or chicken using a rotational movement. This will help make them tender!3- Now add the vegetables, here we have baby corn, carrots, onion, red bell pepper, and scallions.
4- Mix the vegetables with the shrimp and cook for 2 minutes.
Step 3: Adding the Rice
1- Finally, add the cooked rice – break it with the spatula and also massage into the shrimp and vegetables so all the favors get together! Cook for another 2-3 minutes and that’s it!2- To serve the fried rice, first place the shrimp or chicken in a bowl, then add the fried rice on top. Pack it well by pushing with the spatula.
Clean the sides of the bowl. Then place a plate on top of the bowl and flip.
3- Here you go! Add a small piece of lime on top of the rice and serve immediately! Bon Appetite!
