Overview
Today I am going to show you how to make a very special Moroccan cooking that I loved growing up, called "Ghriba B Jenjalan". "Ghriba" is a Moroccan cookie that we make with very different types of nuts (e.g. almonds, coconut, walnuts, etc.) - Check out my previous videos on how to make them>
Today we are going to make them with sesame seeds! If you are a sesamse seeds lover then this recipe is for you, and if you have never had sesame seeds before, then this recipe is for you too! because it's the best introduction you can have of sesame seeds!Another good thing about the cookies is that it's gluten free!

Step 1: Making the Cookie Mixture
- The first step is to roast the sesame seeds on medium heat. Notice that I am using brown sesame seeds and not white sesame seeds, it makes a big difference.
- Stir the sesame seeds from time to time, to avoid burning them.
- Roast the sesame seeds for around 8-10 minutes (on medium heat). The color of the sesame seeds will get darker. Also, if you taste them, they will have a roasted taste instead of raw.
- Place the sesame seeds in a food processor and mix them until you get a very fine powder.
- Add to the processor, the powdered sugar, the baking powder, and a pinch of salt. Mix for 1 minute. From time to time scrape the sides of the bowl with a spatula to make sure everything is mixed.
- Add the honey (or jam) and 1 egg. Mix again.
- You will get a very smooth dough. Place the dough in a bowl and let it cool down for a few minutes before starting to roll the cookies.
