Tfaya couscous


Ingredients :
  • 800 g couscous
  • 300 g chickpeas, soaked overnight
  • 1 kg of veal or beef
  • 1 kg minced onion
  • 1 bunch of parsley
  • 250 g raisins
  • 1 tablespoon of butter
  • 1 tablespoon of cinnamon
  • 1 tablespoon of turmeric
  • 2 eggs
  • GingR
  • Olive oil
  • Cinnamon
  • 2 tablespoons of honey
  • Salt & pepper

Recipe 
  • At the bottom of steamer; put the meat with one chopped onion, ginger, salt, pepper, a little olive oil, fry for 20 minutes on low heat. Add 2 liters of water, chickpeas and bunch of parsley, cook
  • Prepare the couscous by adding half a cup of oil, mix well and place it on top of the couscous when you see the steam coming out, remove the couscous and add warm water (about 3 cups of water) mix and return it to its place, repeat the process 3 times.
  • In a large skillet, fry the chopped onions made with a glass of water, until a transparent color, add the butter, cinnamon, turmeric, salt and pepper cook for 10 minutes.
  • Add raisins and honey, made caramelize
  • Place the couscous in a large bowl and put the meat in the center and the chickpeas and garnished with caramelized onions.
